I like a garlic sauce.
Preheat your oven to 250-270
For the artichokes, I put them in a quarter loaf bread pan with a tablespoon of butter on top of each, and a quarter inch of olive oil in the bottom of the pan.
For the garlic, peel enough garlic cloves to fill a small corning ware crock with garlic cloves. Add about a half teaspoon of sea salt, and a tablespoon of butter. If you want you can put some fresh ground pepper in also.
Bake the artichokes and garlic for about 45 min to an hour, or until the garlic is soft and squishy. take everything out of the oven, and mash the garlic up in the crock until a smooth consistency. If you want a cheesy flavor, you can mix some parmigiana or mozzarella into the garlic dip.
After allowing the artichokes to cool a bit, cut the hearts out, and arrange on a serving platter. I generally serve roasted artichokes with the garlic spread and crackers.

I’ve also seen recipes with mayo in them before that look pretty good.
I boil the artichoke and a clove of garlic in water for 40 minutes. You could also add garlic to the butter if you wanted to.

ohhh try mayo, curry and lemon juice. i dont even have a recipe you just make it to taste… start with like 3 or 4 T of mayo and then curry to taste and lemon to taste. but you wont use to much lemon. ah its my favorite on artichokes! i also had them once grilled with truffle oil. that was amazing to. but it costs a lot of money.
