It all depends on what you are making, and what your taste in wine is like. I’ve used many different wines when I cook. Chablis, pinot grigio, champagne, marsala, chianti, cream sherry…..I don’t think it matters what you use. You’ll just get a different flavor depending on what you use.
Just so you know, you can also bake with wines and liqueurs. Yum!

My rule is – would I drink it with this meal – then I will use it to cook the meal
That goes for beer and wine.

It really depends on A: what you’re making, and B: your personal tastes. The general rule of thumb is: if it’s okay to drink, it’s okay to cook with. You don’t want to cook with anything that you wouldn’t drink.
