I am trying to lose weight but I don’t really want to get caught up in strict dieting. Instead I want to focus more on changing my lifestyle by eating healthier. Does anyody have sime simple meal ideas that are healthy but not boring? (I’m tired of eating salads and grilled chicken breasts)

Chicken Casserole.
Cut Chicken into bite sized pieces and brown with some garlic and onion in a little oil and transfer to casserole dish.
Add diced Peppers and other vegetables.
Use soup mix as a liquid.
Cover with bread crumbs and grated cheese and bake in a 180C for about 20 minutes until bubbling hot and the cheese has started to brown.

Try watching 30 minute meals with Rachel Ray on The Food Channel. The programs are not for losing weight exactly, just eating better and relatively quickly, with a very wide variety of items. She has a book of recipes as well, and recently started an hour long talk show on CBS, I think. I record her program and later transcribe from the tape. It goes by so fast, there is not enough time to write everything down during the program. My recipe box now has several dozen cards made from her shows.

I love making fish when I am watching what I eat. Poached is a very healthy way to prepare fish.
I pair that with some sauteed veggies (in light extra virgin olive oil) . I alway start w/some minced garlic and sliced onions. Add in some sliced carrots and broccoli. Finish with spinach, until it’s wilted, and a sprinkle of koasher salt.
Brown rice is a healthy side (but it’s an aquired taste). You can also try some whole grain pasta (boil it longer than recommended so it has the same texture as flour pasta) and toss it with some pesto and sprinkle on some fresh parmesan!
